| Raise Your Glass Ask The Expert by Chris Gasbarro The meal is over and everyone has headed to another room—perhaps to sit by the fire. Now is the perfect time to delight your guests with an "after-dinner" drink.
There are many specialty drinks that are so rich and sweetly flavorful they can function as dessert. Frappes, frozen cappuccinos, and adult milkshakes are all libations that your guests will find hard to resist. A frappe is a mixed drink served over a mound of crushed ice in a champagne or cocktail glass. Think of it as a liqueur-laced snow cone. Some popular frappes are the Green Hooter, made with equal parts of Midori, light rum, orange and pineapple juice; and the Coffee Marnier featuring equal parts of Kahlua, Grand Marnier and orange juice. You can prepare a number of frappes in advance, insert a cocktail straw in each glass, and place them in the freezer. A short time later, the surface the ice will form a translucent crust that freezes the straw in place, adding the perfect touch. Blended cappuccino drinks are similarly easy to prepare. For a frozen Mudslide Cappuccino, blend French vanilla ice cream with Baileys Irish Cream and Kahlua, or use Kahlua and Amaretto to make a frozen version of the Toasted Almond. For a raspberry-flavored libation, blend Tia Maria and Chambord into an ice cream cappuccino. For something truly special, whip up an adult milkshake for your guests. Ice cream, sorbet and frozen yogurt are ideal mediums for liqueurs and cordials. Two recipes that are sure to impress are the Chococlate Covered Banana, a blend of Baileys or Carolans Irish Cream, crème de banana, chocolate syrup and ice cream; and the Raspberry Rum Cream, made with Chambord, crème de cacao, light rum, raspberry yogurt and raspberry ice cream. Champagne cocktails are also guaranteed to make a dinner party memorable. Some to try are the Champagne Marseilles, which is made with equal parts of Grand Marnier, Amaretto, vodka, orange juice and champagne; and the Pacific Rim, a blend of Midori, peach schnapps and champagne. Other concoctions making the rounds are the Dry Arroyo, a combination of Chambord, Starbuck’s Coffee Liqueur and champagne; and the Ritz Fizz, which features Amaretto, Blue Curacao, sweetened lemon juice and champagne. To heat things up, try a hot coffee drink made with a liqueur. The Abbey Road is a delicious blend of Chambord, Starbuck’s Coffee Liqueur, Amaretto and coffee; while Millionaire’s Coffee features equal parts of Kahlua, Baileys or Carolans Irish Cream, Frangelico, Grand Marnier and coffee.
